What does Prime, Choice and Select mean?

For years people have been asking our family if they can purchase our beef.

Pennridge Ranch Meats is proud to produce all natural, 
Prime and Choice beef. What does this mean and why is it important?

The USDA has three grades for beef - Prime, Choice and Select. Beef is graded in two ways: quality grades for tenderness, juiciness and flavor; and yield grades for the amount of usable lean meat on the carcass. 

Marbling is the amount of fat streaking within the cut of meat and adds flavor, juiciness and tenderness. 

Prime beef accounts for 2.9% of all graded beef and is the most marbled beef product. The USDA states that Prime beef is produced from young, well-fed cattle. 

Choice beef is high quality, but has less marbling than Prime. "Choice roasts and steaks from the loin and rib will be very tender, juicy, and flavorful and are suited for dry-heat cooking." 

Select beef has the least amount of marbling and is typically more lean. Because it has the least amount of marbling, it isn't as juicy or bursting with flavor when compared to Choice and Prime cuts.
